Balsamic Basil Marinated Boneless Skinless Chicken Thighs
10 steps to a delicious, easy dinner! Marinate these chicken thighs the morning of with two simple, cheap shelf stable ingredients that you always have on hand!
Ingredients
- Boneless Skinless Chicken Thighs
- Balsamic Vinegar
- Dried (or Fresh) Basil
- Salt
- Pepper (I prefer restaurant style pepper)
Instructions
- Remove any excess fat from the chicken thighs with kitchen scissors, if desired
- Place chicken thighs in gallon ziploc bag
- Pour balsamic vinegar, basil, salt, and pepper into the bag. Be liberal with the basil!!
- Marinate all day, or at least a couple hours
- Preheat the oven to 400 degrees farenheight
- Dump bag into a casserole dish
- Bake for 30 minutes
- Check internal temperature - at 165 degrees farenheight or above it is cooked
- Let rest for 5 minutes
- ENJOY!

Serve with roasted baby potatoes, tricolor quinoa, or quick homefries (dice potatoes, season with a little oil, salt, pepper, garlic powder, paprika, and parsley) and bake at 400 or 425 for 15 minutes, mix, then another 10-15 minutes and and a side green salad, green beans, or asparagus.
BBQ Marinated Leg Quarters or Chicken Breast
BBQ Marinated chicken leg quarters are excellent on the grill but BBQ marinated chicken breast is good in the oven when the weather doesn't cooperate
Ingredients
- Chicken leg quarters or chicken breast
- Homemade BBQ sauce or your favorite BBQ Sauce
- Salt
- Pepper
- Smoked Paprika (optional)
- Maple Syrup (optional)
Instructions
- Remove any excess fat from the chicken breast if desired
- Place meat into a gallon ziploc bag
- Cover in your favorite BBQ sauce
- Add salt and pepper, and some maple syrup and/or smoked paprika if desired
- Marinate all day, or at least 2 hours
- Cook chicken leg quarters on medium high grill for 45 minutes to an hour. Occasionally turn and baste with the BBQ from the bag.
- Dump chicken breast and marinade into casserole dish
- Bake at 400 for 30 minutes and check for internal temperature above 165 degrees farinheight

- 1 packet onion soup mix
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1/8 cup water
- 1/8 cup vinegar
Instructions
- Preheat the oven to 400 degrees farinheight
- Mix the ingredients together well in a small bowl
- Cut the chicken breast into reasonable sized pieces if desired or if they are very large
- Spoon the sauce over the chicken breast pieces
- Bake for 30 minutes or until internal temperature is 165 degrees farinheight
